VARIETAL COMPOSITON

Chardonnay

WINEMAKING

Delicate stalk-stripping and crushing. Pressing, clarification,

fermentation of the clean must for 20 days at 12° C.

TASTING NOTES

Bright straw yellow color. Aromas of ripe tropical fruits,

and a hint of citrus zest. On the palate it’s fresh and well

balanced, with notes of pineapple, apple, and delicate floral

nuances. The finish is smooth, with pleasant minerality and a

touch of almond.

FOOD PAIRING

Perfectly pairs with light appetizers, fresh seafood,

grilled fish, white meats, vegetable and mushroom

risotto, and soft cheeses. Serve at 10-12° C.

WINEMAKING

Traditional method. The grapes are pressed as soon as they

are picked. After a brief debourbage, the must is left to

ferment at a controlled temperature. This maintains the

ragrance of the grape and enhances the characteristics

given by the area of origin.

TASTING NOTES

Bright straw-yellow color with a hint of green. A flowery

aroma with subtle fresh fruit notes. A well-rounded

seductively elegant, velvety wine with harmonious

palate.

FOOD PAIRING

Perfect as an aperitif. Pairs well with a great

variety of dishes, including poultry, vegetarian

dishes, pasta.

WINEMAKING

Harvest and timely processing of the grapes with a low

destemmer, designed to preserve the integrity of the berries.

Maceration and fermentation in steel at controlled temperature,

then maturation and refinement on the lees. It can undergo a

passage in wood.

TASTING NOTES

Deep intense ruby red, smells of blackberries and strawberry

jam, rosemary, violet and humus. Smooth in the mouth,

complex, full-bodied and very persistent.

FOOD PAIRING

First courses with meat sauce and mushrooms, polenta,

grilled meat, and medium aged cheeses. Serve at

16/18° C.

Broccardo Langhe Nebbiolo

Winemaker Notes

Broccardo's Il Gío Pi is made from 100% Nebbiolo from 25 year-old vines grown in Monforte d'Alba, Barolo and Novello on sandy clay/silt soils. All grapes are hand-harvested and fermented in stainless steel with a maceration of 10-15 days beofre aging for 10 months in new and used Slavonian and French oak tonneaux. Mid-ruby color with aromas of of raspberries, blueberries and wild strawberries. The palate features a refreshing acidity and well-integrated tannins that allow the purity of fruit flavors to shine. A surprisingly good match for spicy food.

Cabernet 80%, Primitivo 20%

ALCOHOL CONTENT 15%

WINEMAKING

Primitivo is harvested from August to early September, while

Cabernet is picked at the end of September. The grapes

undergo maceration and pressing for color and tannin

extraction, followed by temperature-controlled fermentation

in stainless steel. The wine then rests to refine and soften the

tannins before bottling.

TASTING NOTES

Deep ruby red with garnet undertones. The nose is i

red fruits and ripe plum, complemented by licorice, chocolate,

and earthy, roasted nuances. The palate is rich, full

well-balanced with soft tannins and a pleasant, herbaceous finish

Serve at 18-20°C.

FOOD PAIRING

Pairs perfectly with red meat, wild game, and seasoned

cheeses, though its rich character makes it equally

excellent on its own.

Reserve Special Collection - Fox Cave red blend
