2022 Ultraviolet Cabernet Sauvignon

- soft, round, velvety tannins.
aromas of violets, blackberry, blueberry.
notes of pie spice, bramble.
- pairs wonderfully with anything salty or high in fat. delicious alongside any of the following dishes: pasta bolognese, sausage pizza, spare ribs (or any red meat), cheese plate, dark chocolate cake.
this wine is 95% cabernet sauvignon and 5% cabernet franc. the cabernet sauvignon comes from the red hills AVA located east of st. helena, at the base of a volcano (1500 feet of elevation). the cabernet franc comes from the coombsville, napa AVA.

Domaine Moulin Nouvel Cabernet Sauvignon L'Antagoniste

- **VARIETAL:** Cabernet Sauvignon
- **WINEMAKERS:** Dominique and Guillaume Andre
- **VINEYARD:** One of the cooler climate parts of the region. Vines are dry farmed and grassed over.
- **TASTING NOTES:** Deep red color with an attractive bouquet of black fruits and a hint of cocoa. Very good structure with elegantly balanced tannins and a long finish.
- **PAIRINGS:** Meats, grilled vegetables and stews.
- Domaine Moulin Nouvel is located in Peyrac-Minervois, 30 minutes north of the medieval city of Carcassonne. The topography makes it one of the cooler climate part of the region, with ideal conditions for slow, even ripening of Cabernet Sauvignon and Merlot. The cooling winds and higher elevations south facing hillsides (over 1,000 feet) allow the vineyards to be planted in optimal locations. Guillaume Andre, third generation family, is farming 100% organically the family estate (21 Has Minnervois AOC and 9 Has Igp). The vines are dry farmed and grassed over. Guillaume also has olive trees and truffle oaks. He participates in an Europe-wide study of biodiversity, encouraging the nesting of native birds, insects and wildlife in the estate.

2025 La Boutanche Olivier Minot Gamay 1L

- **Producer:** Olivier Minot
- **Region:** Beaujolais
- 100% gamay from Southern Beaujolais, the grapes are harvested from 90-year-old vines, fermented and aged in concrete tanks, and bottled with zero sulfur
- “When we were first starting out, we quickly became disappointed with the lack of good natural wine in the $20 range. Not being the kind of people to say ‘well, it is what it is’, we got to work thinking about how we could remedy this situation. So, we started talking with our producers and, already knowing what we wanted - native yeast fermentations, low or zero SO2 additions, and the like; basically pure unadulterated glou glou that we could put into a liter-sized screw-top bottle and would be a great introduction to natural wine - it didn’t take long for us to find winemakers who were willing to partner with us on this project. All it needed was a name.
- The first run of Boutanche was back in 2012. As you may remember, it had a bright pink label that read ‘La Boutanche’ with pig in a Hawaiian shirt polishing off a glass of wine above that, and not much else. The juice inside was what mattered (at the time it was Gamay made by Maison PUR), and the juice inside seriously overdelivered for its low retail price. It was an immediate hit. Flash forward to today and there are many different Boutanche: the grasshopper (Andi Knauss), the fish (Frantz Saumon), the pig (Olivier Minot), the French bulldog (Quentin Bourse), the gorilla (Martin Texier), you name it. We are committed to expanding the line and having Boutanche be the first bottle you reach for around $20, either if it’s your daily go-to wine or if it will be your first natural wine experience. Boutanche is now synonymous with high-quality natty juice at a fair price, so stay tuned for new releases under this label.”

2025 Adega Ponte da Barca Las Lilas Vinho Verde

- **APPELLATION:** Vinho Verde
- **VARIETAL:** Louriero and Treixadura 100% Estate Grown. Vines 25+ years of age.
- **WINEMAKER:** José Oliveira
- **VINIFICATION:** Traditional
- **TASTING NOTES:** Fragrant aromas of white fruits with floral notes. Elegant and refreshingly crisp, with gentle effervescence. The Las Lilas vineyards are nestled between the Lima and Vez rivers, in the Vinho Verde wine region of Portugal. Almost half of the 34 acres of vineyards are planted with old vines (> 25 years old). Las Lilas’ winemaker, José Oliveira has been working in the region for almost 20 years. Literally meaning “green wine,” the Vinho Verde name actually refers to it being a wine that is usually drunk “young.” A cooler climate and granitic soil lead to fresh, light wines with good acidity. Their low alcohol content and slight effervescence make them excellent as an aperitif, or for an afternoon spent in the backyard

2024 Christina Gruner Veltliner

- Winemaker’s note: “This vineyard is one of the cooler places in our region, which benefit from the chilled winds of the nearby River Danube, especially during hot summers. This factor allows for the intensive aromatic and fizzy acidity in the grapes to be preserved. Specifically, the red gravel (iron) brings minerality and the typical “pepper” to our Grüner Veltliner.”
- Soil: red gravel and loess. Estate-owned and farmed by Christina’s family, certified organic.
- Varieties: Gruner Veltliner
- Vinification Method: Grapes are hand-harvested and pressed as whole bunches. The juice is fermented spontaneously in stainless steel in a long, slow ferment thanks to the cold cellar temperatures. Bottled unfined and unfiltered, with a small addition of sulfur.
- Personality: a beautiful image of its variety, this GruVe mingles apple, bright acidity and peppery undertones in just the right proportions. Pairs well with fried chicken and light fish and seafood, or go for Wiener Schnitzel or pork knuckle if a full-on Austrian experience is required. The winemaker recommends to shake the bottle a bit before serving.

2024 Breaking Bread Pet Nat Sparkling Zinfandel

- Varietal: 100% Zinfandel
- Appellation: Dry Creek Valley
- Harvest: August 2024
- Fermentation: 100% native yeast in stainless

- Vineyard Description: Mizany Vineyard is a 16-acre vineyard planted in the famous Cortina Gravel of Dry Creek Valley. We purchased the vineyard in 2011 and named it after my father-in-law. When planting the Zinfandel Vineyard, we took a heritage approach and planted a field blend much like the first vineyards planted in the area. Our Zinfandel clone is the DuPratt clone on 1103 Paulsen root stalk.
- Winemaker Notes:
- Guava and wild strawberry cherry come off the nose of this wine with a distinctive, wet gravel minerality. As you look at the wine in your glass it continues to dance and open to its more complex flavors and aromatics. The palate on this wine evokes a traditional Champagne in weight and fineness of bubbles; however, the easy-drinking, fruit forward youth of the wine make it very quaffable.
