Our 2022 Cabernet Sauvignon is deep, rich, and built for the long haul. The aromatics come on immediately with cherry confit, cocoa, and ripe plum, wrapped in seamlessly integrated oak that lends vanilla, toasted coffee, and cedar. With air, darker tones emerge: black currant, lead pencil and tobacco. On the palate it’s full-bodied and concentrated, starting smooth and polished before revealing a firmer core. A backbone of acidity balances the weight and pulls the wine through the finish. Abundant, structured tannins anchor everything, giving this Cabernet serious aging potential and a lingering, persistent finish.

The Source is 100% Syrah and 100% the reason we do what we do. In 2023, it’s drawn from every Syrah block on the Copia Estate, bringing together the full spectrum of our site—from the ancient seabed soils beneath our feet to the distinct exposures that shape depth, energy, and nuance. This is Syrah with quiet authority: intense, layered, and unmistakably Copia. The aromatics are immediately compelling as dark berries lift from the glass alongside violet florals and a smoky, savory edge. The vivid profile continues with more complexity: peppery herbs, incense-like spice, black olive, and game, with a mineral undercurrent that keeps the profile vivid rather than heavy. It’s full-bodied and concentrated with rich fruit depth carried by refreshing acidity and firm, velvety tannins.

The Cure is inspired by the great Southern Rhône regions of Châteauneuf-du-Pape and Gigondas. With that said, this is wholeheartedly a Paso Robles G-S-M, with a focus on letting the vintage dictate what will lead. In 2023, Syrah became the predominant component of the blend for its texture and complexity. The profile is black fruited, rich and spicy, with wild herbs, sandalwood and leather. Powerful elegance and an opulent finish will allow this wine to stand up to meaty cuisine, earthy root vegetables and aged cheeses.

The Story is our Willow Creek Estate Grenache, drawn from two blocks that show the grape’s most compelling contradiction: quiet power with an elegantly flirtatious lift. Block 4 (Clone 362, own-rooted, northeast-facing) is the last to ripen and reliably the most aromatic—our benchmark Grenache block. Block 21 (Alban clone on St. George, southwest-facing) brings smaller berries, deeper color, and the concentration that gives this wine its spine. It’s a proud milestone for Copia to bottle a singular Grenache from the 2023 vintage. The nose is fragrant and layered: raspberry and bright wild strawberry, followed by rose, lavender, and incense. Savory accents of pepper and garrigue add complexity, while a citrus lift keeps it energetic. On the palate, it’s medium-bodied with a pure, focused red-fruit core, refreshing acidity, and ultra-fine tannins with a long, perfumed finish.

2024’s Rosé is vibrant, zesty and fruity - a perfect wine to enjoy with friends and rich cuisine! As in years past we feature Grenache and Mourvèdre from the Willow Creek Estate. This wine is dry, light in color and expresses refreshing watermelon, sweet raspberry, white cherry blossom and tart mouthwatering acidity. It's an amazing accompaniment to an elegant brunch, a holiday dinner or a day by the pool enjoying your favorite cheese and charcuterie.
2022 White
60% Roussanne and 40% Viognier

Winemaking
Varietals were handpicked on August 29th and gently whole cluster pressed. After cold settling, the wine was fermented at cool temperatures in French oak and Amphora. Malolactic fermentation was slow and steady. Batonnage was performed throughout primary and secondary fermentation. This wine is aged on the lees for 7 months in 47% neutral French oak, 30% Amphora, 23% new French oak.
