Paul Lato "Le Souvenir - Sierra Madre Vineyard" Santa Maria Valley Chardonnay - $80

The Paul Lato Chardonnay Le Souvenir Sierra Madre Vineyard just about jumps out of the glass with its orchard and citrus fruits, spice, and rocky, mineral, marine-like aromas and flavors. Coming from a site outside of Santa Maria, it's medium to full-bodied, has wonderful purity and precision, integrated acidity, and a great finish.

The wine blossoms on the palate with layers of varietal fruit, minerals and flowers. It is a strikingly pure Chardonnay loaded with class and pedigree. The fruit is ripe and quite generous, but never tropical or heavy in any way.
Paul Lato was a sommelier at some of Toronto's best restaurants when Jim Clendenen of Au Bon Climat invited him to the Central Coast to help with the 1996 harvest. Lato returned to Toronto, but he'd been entranced with the idea of making wine. In 2002 Lato packed up and moved permanently to the Central Coast, where he worked as a cellar rat and made small amounts of his own wine on the side. His first vintages were praised by Robert M. Parker Jr. and other reviewers, and since then he has continued to make small amounts of Pinot Noir, Syrah and Chardonnay in Santa Maria from grapes sourced in Santa Rita, Santa Ynez Valley and the Santa Maria Valley. Though he makes only about 500 cases a year, Lato has earned a reputation for excellence. Robert M. Parker Jr. has generally rated Lato’s wines between 90 and 95 pts and notes that “Lato’s passion and impeccable attention to detail have resulted in some outstanding wines.” Lato's wines are usually available only by mailing list.
McNab Ridge Family Reserve Largo Cabernet Sauvignon - $40

Winemaker Notes:
The grapes were chosen from the White Oak Ranch, Whaler and Largo Ridge Vineyards. These vineyards are all located in the hillsides off the eastern bank
of the Russian River between Hopland and Ukiah in the area known as Largo.
The wine has a beautiful black cherry character with distinct
aromas and flavors of cassis, cocoa, elegant cigar box &
beautiful dark fruits. This full-bodied and balanced wine has
a richly woven texture and a lingering finish that displays
evolving dark berry, vanilla and baking spice flavors.
Pair with your favorite grilled steak, pan seared duck breast
or a delicious Portobello Burger.
Varietal Composition: 95% Cabernet Sauvignon, 5% Merlot

Chateau d'Arcins Haut-Medoc, France -$30

Château D’Arcins offers a deep, dark crimson color. The nose develops attractive aromas of black fruit and mocha. The powerful palate is characterized by luxurious tannins softened by notes of eucalyptus which give this wine its freshness and complexity.
Home-made terrines, a slow cooked leg of lamb, duck with bacon, a fillet steak, game, traditional cuisine and mature cheeses.
Blend: 50% Merlot, 50% Cabernet Sauvignon
Planted for the Templars in the 14th Century, the Château d’Arcins is today one of the oldest estates in Haut-Médoc. From the vinyard to the cellar, the estate has been entirely reonovated since its aquisition by the Castel family in 1971.

Terroir: The 100 hectare estate sits on top of gravelly and sandy soil, as well as limestone and chalk. It benefits from the climate conditions and the exceptional geology. The grape variety is mostly composed of cabernet sauvignon and merlot.

Viticulture: A large amount of care is taken in debudding and stripping the vines, as well as the green harvest. The planting desnity is high with 9000 plants per hectare. The the average age of the vines is between 20 and 25. The harvest is mechanical.

Wine-Making 50% Merlot 50% Cabernet Sauvignon: During the harvest, but also during the wine making prosses, the grapes are sorted drastically. A traditional technique is used to make the wine, but adapted for this vintage. It is not subject to pre fermentation maceration, and the fermentation is done in thermo-regulated tanks. Aging lasts for 12 months, in new barrels with no oak, the wine is protected from oxygen.
Serego Alighieri Possessioni Bianco - $20

Grape- Sauvignon Blanc,Garganega
Pale yellow, almost colorless but with light, greenish reflections. Characteristic aromas of Sauvignon on the nose with delicate hints of pears. Medium weight with good structure. Well, balanced,refreshing, and very drinkable, all the way through to a long, dry finish
Blend: 75% Garganega, 25% Sauvignon Blanc
Perfect as an aperitif. Recommended also with starters, light summer dishes, fish, pizza, cold cuts and poultry.
ABOUT THIS WINE
Unique type of Venetian white wine in which the intense aromas of Sauvignon are paired with the elegance of Garganega, which provides its characteristically long aftertaste with an almondy twist on the finish.
ABOUT THIS PRODUCER
Serego Alighieri is one of the most prestigious and historic Venetian estates with a tradition of winemaking in Valpolicella dating back more than 650 years. It all began in 1353 when Pietro Alighieri, son of “the Supreme Poet” Dante, bought the Casal dei Ronchi vineyard in Gargagnago in the center of Valpolicella Classica, which remains at the heart of this historic property today. In 1549 when the Alighieri family found itself with only female heirs, they married into the powerful imperial Serego family, resulting in the Serego Alighieri name which the family has carried on ever since. Most recently, in 1973, Tenuta Serego Alighieri joined the Masi Group, with whom they share a great love for the land. The Masi Technical Group, under the leadership of Raffaele Boscaini, substitutes the figure of the winemaker with that of a team of experts including oenologists, agronomists, marketing experts, chemists, and food product technicians. Today, the property where 21 of Dante’s descendants have lived generation after generation, is a landmark site for viticulture and the embodiment of the true spirit of Valpolicella.
